Velmi moderní vinařství navazující na tradiční pěstování a výrobu vína. Jeho majitel Leo Hillinger nejdříve absolvoval vinařské školy v Rakousku a po řadě stáží v Evropě získal bohaté zkušenosti taktéž v Kalifornii, kde pracoval na vinifikaci kvalitních vín. V roce 1990 převzal vinařství svého otce a zahájil jeho reformu. V poměrně krátké době dosáhl výrazného růstu kvality vína i tržeb. Získal řadu ocenění, např.: Vítěz Grand Cru, 92 bodů 2006, Pinot Noir terroir. Jedním z vrcholů jeho kariéry, na který může být patřičně hrdý, je architektonicky unikátní a technologicky velmi vyspělé vinařství v Dar Jois, postavené v r. 2004. Vinařství Hillinger se prezentuje stylovým logem a nezaměnitelnými, designově propracovanými etiketami (vinětami).
“When the grape is excellent, then one has much less to do in the cellar. From years of experience and much-experimenting, I know that the fruit needs to be perfect and bottled without alteration.”
Leo Hillinger’s methods are marked by a deep respect for the grape, the particularities of the terroir and its climatic conditions. His wines are convincing through their fullness and gentleness which mirror the characteristic nature of the land from which they originate.
“I do not want an interchangeable fashionable wine, rather I want to produce a truly Austrian, if not Burgenlandian top-quality wine,” says Hillinger. Moreover, “Making wine is for me a source of happiness. It combines hobby with vocation. I cannot imagine anything more beautiful.”
