Vinification methods :
We apply the traditional vinification methods that consist in two fermentations followed by a rest period on fine lies in winter time. Then come the racking, fining and cold stabilisation. Then the wine goes through a light filtration. All the vinification and aging process is made in stainless steel tank in order to let this Premier Cru express all its fineness, elegance and minerality, all due to the Kimmeridgian soil, typical of the Chablis terroir.
Tasting comments :
This wine is the perfect example of a classic Chablis Premier Cru. Its exposure to a morning sun, therefore cooler sun, reveals its elegance and enhances its minerality and richness drawn from the calcareous and clay subsoil. It presents a rich yellow gold colour with green hints, and its nose reveals mint and pineapple aromas. Its flavours are full and freshness dominates, with a long persisting finish.
Keeping time :
Thanks to its nice minerality, 1er Cru Vaulignot is a wine to keep for 5 to 8 years.
Delicious with... :
Premier Cru Vaulignot will be perfect served with a plate of seafood or an angler tail in the oven to enhance its minerality and iodized notes. Serve between 13° and 14°.
