Dear ladies and gentlemen, lovers of wine,

We would like to introduce you to the Špalek Family Winery

The family winery operates in the Znojmo wine-growing region, which is bio-geographically located in the north-pannonic sub-province. The entire pannonicum has typically a very warm climate with continental influences coming from the east and also from the Mediterranean south. On top of that its northern part lies within the reach of the cooler and moister Atlantic currents, of which mass and frequency reflect in the differences between individual vintages of wine. The Atlantic currents break the accelerating influence of the continental and Mediterranean climate and this way they significantly contribute to the higher creation of typical variety spectrums of aromatic agents.
 
 
Our vineyards stretch on the south-eastern slopes of Kraví hora in Sedlešovice. Kraví hora lies on the border of two geological areas: Bohemian Massif – crystalline complex composed of granolites and slates and Western Carpathiens composed of sea and freshwater sediments and loess. Just the granolite underbed gives our wines their unique mineral character. Low bushes, small yield burden and consistent green work in the vineyards help good maturing of our grapes.

The wine cellars, in which we process the grapes into the precious liquid gems, are found in the underground part of Nový Šaldorf, called Blue Cellars. They are dug into sandstone – Tertiary sea alluvium sediments. The age of the cellars varies from three to six hundred years. The cellars are up to 15 m deep underground, maintaining a constant temperature of 9°C and their surface is partially covered by cellar mould (Cladosporium celare), which cleans the air in the cellar and maintains an even moisture.

The grape processing technology and production of wine utilises the latest findings of wine-growing science and is influenced by many local and foreign experiences. Meticulous and responsible work makes to create an interesting assortment of wines.

The wine-growing tradition of the Špalek family in Nový Šaldorf was started by grandfather Josef Špalek, who in 1945 moved with his entire family into the evacuated southern part of the Znojmo region. The imaginary wine-growing relay was passed to his youngest son František, who has been making wine since 1970. In 1992 František Špalek decided together with his two sons (Marek Špalek and son-in-law Petr Ilgner) to establish a private family winery, oriented to the production of high quality wines in small quantities.
