HARVESTING : The harvest with immediate grape selection in the vineyard are always manual. Transport to the wine-making cellar is made in small containers. The grapes are pressed in pneumatic presses of the latest generation that allow full respect of the harvest grapes, followed by slow fermentation without yeasting during several weeks, made under strict permanent monitoring of the temperature in large oak casks.
